A Pinterest WIN!



I made another recipe from Pinterest and I finally documented it! Well enough to share it with you! 

I made Oven Baked Zucchini Chips, from this website: Bakerlady. I found it on Pinterest which led me to her website. 


Ingredients:

1/4 cup dry breadcrumbs
1/4 cup grated fresh Parmesan cheese
1/4 teaspoon seasoned salt
1/4 teaspoon garlic powder
1/8 teaspoon freshly ground black pepper
1/4 cup unsweetened almond milk (you could also use skim milk)
2 1/2 cups (1/4-inch-thick) slices zucchini
Cooking spray








Instructions:

Preheat oven to 425°.
Combine first 5 ingredients in a medium bowl, stirring with a whisk.
Place milk in a shallow bowl. Dip zucchini slices in milk, and dredge in breadcrumb mixture.
Place coated slices on an ovenproof wire rack coated with cooking spray; place rack on a baking sheet, spray tops with cooking spray.
Bake at 425° for 30 minutes or until browned and crisp. Serve immediately.













Watch for the time!







An important note the 30 minutes did not work for me! You can see, I fried them to a crisp brown! The second batch I put them in for 20 minutes however took them out after 17. The rest of them I kept in for 15-17minuntes. 








These chips are good out of the oven however, I found them heavenly once they were room temp!
